I'm wondering if it is possible to freeze a quiche. And if so, would one freeze a quiche which has been baked or is uncooked?
Any other adivce about this?
Quiches freeze quite well. I've only frozen them after baking, so I can't speak about whether it's possible to freeze them unbaked, however. I'm inclined to say no--you could make and freeze the pre-baked crust, but not likely the custard mixture. Just a guess. When I freeze my finished quiches, I often cut them into portions and wrap them individually, then thaw and rewarm on a baking sheet. Mmmmm...they turn out beautifully.
I do this a lot, with no problem. I think that you will be happier w/ the texture if you slightly undercook them. Cook until done, but not golden.
