        <content>According to conventional wisdom, boiling vegetables causes the vitamins and minerals leach into the water, whereas steaming keeps the nutrients within. 
 
Is this true? What other cooking methods allow vegetables to retain their nutritional value? 
 
Being dry methods, roasting and stir-frying come to mind. (I'm not worried about adding fat to the vegetables, say, by drizzling on oil before roasting or by stir-frying in butter or oil.)</content>

      <content>I would think microwaving would preserve nutrients, if boiling leaches nutrients out.
 
But, because of the illnesses caused by "dirty" veggies, I have gone back to boiling the veggies I purchase.</content>

      <content>I heard that if you soak the veggies in 1 T of bleach per gallon of cold water for 15 min., it kills all that stuff and draws out pesticides.  Scrub real well after the soak.  And people who don't like the idea of bleach sometimes use white vinegar.</content>
