        <content>I have decided I want to learn how to do candy (Esp. toffee) and don't quite know where to start.  Does anybody know of a good cookbook for candy?  Ideally one that is available nationally.  Thanks!</content>

      <content>Oh Fudge!: A Celebration of America's Favorite Candy
by Lee Edwards Benning 
 
This books walks you through fudge and all its relations - fondant, taffy, caramels, and, yes, toffee.  She is great at explaining how the same basic ingredients (butter, sugar, cream) give different results, based on proportions, cooking temperature, handling, etc.  If you want to understand what you're doing, rather than just following recipes, it's a great book.  Also, yummiest peanut butter fudge ever.  One caveat - there are a handful of creepy recipes using Jello and flavored butterscotch chips and things like that.  I just pretend those aren't there.</content>
