Mom is in an assisted living home and the food is pretty dreary. She used to be an amazing cook, and although her tastes have narrowed, she still loves food. We are trying to stock the refrigerator in her room with alternative meals. (No stove, she doesn't want to cook.) Any suggestions for pre-made/store bought things she can keep in her room/fridge? (example: she made a really nice chef's salad the other day)

Continuing in the salad theme I would suggest Greek salad, antipasto salad, perhaps a tuna nicoise salad with a nice can of olive oil packed albacore. If you can get a deli counter to cut pieces (not thin slices) of turkey or chicken breast she could do variations on taco salad or chinese chicken salad. A roast chicken from the store is another thought. A selection of pre-made interesting dips and spreads (hummus etc) and nice crackers or good bread is another thought for times she wants just a little something.

Get her a supply of gourmet canned seafood. Both Dave's (in Santa Cruz) and The Tuna Guys (Seattle area) have gotten rave reviews on chowhound boards. A friend of mine who's a professional chef lives in Santa Cruz and swears by Dave's.

They both have crab, shrimp and other stuff as well as gourmet tuna.

Here's a thread on the same topic that I started a couple of months ago. Hope it's helpful.
