      <content>For a pastry reference with solid techniques and lots of great recipes, you can't miss with The Pie and Pastry Bible, by Rose Levy Beranbaum. I also like Bernard Clayton's Complete Book of Pastry - probably out of print, but easy to find a copy online.
 
Another excellent book is Pastries from La Brea Bakery, by Nancy Silverton. This book would be a great companion to either of the above titles and has some of the best doughnut recipes I've found anywhere.</content>

      <content>I second the rccomendation for the Pastries of La Brea. I haven't yet tried the doughnuts, but everything else I have made is absolutely incredible. I was so excited the first time I made the bear claws- even the couple of misshapen ones were sublime. The Danish dough required for that recipe is simply amazing. Also, the Viennese brioche pastries are fabulous, and I'll be making the pear crisp next week for Rosh Hashana(fairly easy and uses canned pears). </content>
