Anyone have any preparations they especially like with this yellow and purple-splotched romano bean-size bush bean that turns lime green when cooked?

They seem to go well with any standard green bean preparation, but I'm wondering if 'hounds have any favorite ways to complement the sweetness and texture.

I recently parboiled them (discovering, to my shock, that the purple coloring disappeared completely!), tossed them in EVOO with some farmer's market onions and garlic scapes, then added some crumpled feta and cooked until the feta was partially melted. Pretty darned good.
