Has anyone made this recipe from the French Laundry cookbook?

My husband and I have made many of these recipes and have always found them dazzling (any errors on our part notwithstanding) but when we made the tomato sorbet it was, well, kind of gross. The vinegar is so overpowering that it is nearly impossible to eat.

Is the sorbet better in the assembled dish than sampled separately? Has anyone made this and had good results?
