        <content>Does anyone know of an exceptional brand of soy cheese that melts well and doesn't taste like plastic?

      <content>the ones that come in pre-wrapped in plastic for some reason tend to have a better texture.  i'm not sure of the brands and since there are usually lots of flavors it could be hit or miss.  also soy kaas (sold in a block) is usually pretty good.  [not a melted dish but a friend used to drown chunks of the cheddar in bramston pickle and eat it on rice bread.  the pickle was the best part, but it still wasn't a bad milk/wheat-free ploughman's lunch.]  especially the monteray jack and pepper jack.  of the pre-sliced variety i recall swiss, jack and mozze as melting nicely.</content>

      <content>good luck!  i used Veggie Slices for a while and while they did melt (somewhat), they would quickly recongeal into plastic if you didn't eat it fast.  after months of soy cheese, i had one slice of kraft american cheese on a soyburger and was overwhelmed by the complex smell of real, processed "american" cheese.  i never knew how much i appreciated kraft singles until then.
 
these days i just go with the non-fat kraft singles since i'm not vegetarian; just trying to cut down on cholesterol...much better than soy cheese.</content>
