This is delicious!
From a hotel in Friday Harbor, WA.

8 cups quick oats
1 cup oil
½ cup honey
½ cup maple syrup
¼ cup water
1 tablespoon vanilla
pinch of salt
1 cup almonds

Preheat oven to 350.
Place oats in large bowl and set aside. In a large pot, mix oil, honey, maple syrup, water, vanilla and salt. Bring to boil. Stir constantly. Pour liquid mixture over oats and stir thoroughly. Spread mixture over oats and stir. Spread mixture onto large baking sheet (covered with parchment paper). Bake for 15 minutes, remove from oven, flip mixture over, add nuts on top and bake 15 minutes. Bake until golden brown. Cool.

Hope this helps

That sounds like a good basic recipe. If you like it a bit sweeter, you can dissolve some brown sugar along with the honey. Barbados molasses is good too. I like to roast sunflower kernels along with the oats so they get toasty. Then don't forget to add some dried fruit when it has cooled - raisins, cranberries, apples, whatever.

Here's my favorite recipe. It is at my recipe website - I post at Chowhound.com a lot and have linked it to my site, so this isn't spam - I promise!

I didn't think healthy was one of the requirements. It's certainly crunchy and delicious.
I guess one could try leaving some of the oil out, but I wouldn't mess with it.
