Vietnamese Fish-in-Clay-Pot

I have looked all over for a recipe for this dish...I know, I should have the Vietnamese name...But it's translated this way, or as fish in caramel sauce, or fish in salty and sweet sauce..It's fish(usually catfish or king mackerel or sometimes salmon) and onions, stewed in a clay pot with a sauce heavy on the nuoc man, with something sweet, which combines with the oils in the fish for a tangy, salty sauce that's been described to me as the kind of thing grandmothers make...I've looked at all the recipe sights...I need a Vietnamese grandmother!!!
