Dutch Processed and regular coco

A while ago I read an article in Martha Stewert's Living that talked about Dutch processed coco and regular. I can't remember what the differencs are, but I know there are and have seen recipes called for one or the other. Can anyone refresh my memory?

  1. Check out the following link for lots of info re cocoa -- dutch vs. non-alkali processed. You have to scroll down the page quite a bit -- beyond the info about chocolate -- to get to the info about cocoa.
