        <content>i've recently discovered these tasty things called anchovies.  a regular quick weekday dish for me now is pasta w/ garlic, fresh ground pepper and anchovies (salt if needed).  
 
my question is re: jarred anchovies.  once opened, should these be stored in the fridge?  in all that oil?  never had foodstuffs packed in oil (other than canned tuna) in our kitchen growing up...</content>

      <content>Yes, by all means keep it in the refridgerator.
 
There is a classic sin committed by restaurants who put garlic cloves in their olive oil and leave it at room temperature on the dining tables. That is actually a recipe for botulism!</content>

      <content>I worked in a restaurant where the chef didn't refrigerate the anchovy paste. When it got rancid, it went bad really quickly! And ruined everything.

      <content>w/o being sure, i put it in the fridge...but was wondering if that was the right thing to do, seeing the oil firm up and stuff...glad i did it!
