        <content>Thanks to all of you who offered your best explainations as to the uses of khak shir.
 
I have to say though, that I think the khak-kishk/kahsk/etc. relationship won't work.  Khak shir is not a dairy product of any kind.  It's a very tiny reddish orange seed.  (I should have mentioned this in my original message.)  Perhaps it's ground up and added to kashk???
 
Until we get a Persian chef to offer his/her expert opinion, I  think I'll go with the explanation which stated that khak shir is made into a medicinal drink.  It sort of smells as thought it could be used that way.

i dont know whether u r iranian or not... khak shir is a nice drink to huv in hot summer days to cool down your body temperature.. it is also recommended when u have stomach/gut problems such as conctipation, u can also use it when u feel nausease by mixing it with some lemon juice.

      <content>Not Lemon juice but lime juice mixed with ice-cold sweetened water. That is a perfect drink for sumer time!
But what I prefer is mixing it with "Aragh-e Shatare" or other types of "araghiyat." (to Non-Iranians: Araghiyat are drinks made of folower-extracts mixed with sweetened ice-cold water. They are both delicious and are beleived to have healing natural powers.)</content>

      <content>Khak shir is an ingredient used in Iranian cookery- it's mugwort seeds, commonly used in the preparation of sharbat in the summer months. You should check out the book 'Persia In Peckham', written by owners of a deli in London- if you like this type of food it's amazing!
