Raspberry Vinaigrette ~ other uses besides salad dressing?

I have some bottled raspberry vinaigrette. Any suggestions as to what else I can use it on/in besides salad?

    I bet it would make a good marinade for chicken.

      I tried that once but it turned the chicken a pinkish-red color. Too wierd.

        Silver Palate Cookbook has a good recipe for Rasberry Chicken but the vinegar is reduced and used as the base for a cream sauce.

      Drizzle it onto roasted asparagus, fruit salad, or grilled salmon.

        I just got saddled with a bottle of this over the weekend. It's just not good as a salad dressing, in fact it reminds me more of a pop-tart than a salad dressing. I think I'm going to try it with a pork loin in the crockpot.

          Lots of dieters put it over a baked potato instead of butter/sour cream/etc. It's not bad.

            I find raspberry vinaigrettes much too sweet. i cut it with some balsamic( i know it's sweet as well) and brush it on grilling chicken as a glaze. I agree that the "color" they use in the making of the dressing turns chicken a weird iridescent pink.

              I've done this.
              Mix the the raspberry dressing wih balsamic, and reduce it.
              I'll grill a piece of salmon, then place it on thinly shredded cabbage. The heat of the chicken will wilt the cabbage/scallion (sometimes pieces of pineapple. Add cilantro last to the slaw. Place a piece of grilled salmon on the bed of salmon. Then drizzle the dressing over the salad and add additional cilantro and thinly sliced scallion chilled in ice water over the top. We love this salad, its very refreshing.

              pour over ice cream, or make a milkshake.
