Lemon Bars like Strabucks

Any of you chowhounders have a good recipe for Lemon Bar. I love the way the Starbucks one taste...not to gooey and the perfect tang dusted off with powdered sugar.

    Lemon Bars
    (I make a double batch of the crust to a single recipe of the topping. I like that ratio of cookie to topping, more lemon and less sweet.)

    Doubled crust:
    2 c flour
    1 c salted butter
    1/2 c powdered sugar

    2 eggs
    1 c sugar
    1/2 t baking powder
    1/4 t salt
    2 t fresh lemon juice, plus finely grated zest if you like things tart.

    Heat oven to 350. Measure flour by dipping of sifting. Blend flour, b. powder and powdered sugar thoroughly. Press evenly into a 8x8" pan. Bake 25-30 minutes. Beat remaining ingredients and pour over crust, bake another 20-25 minutes. Do Not Overbake! The filling puffs during baking but falls when it cools.

    When cool, dust lightly with powdered sugar (use a tea strainer to avoid glops). Cut into 16 2" squares. Keep tightly covered for a few days, If You Can!
    These are insanely good if you're a lemon fan!

      This recipe sounds good but it has missing info....

      "Measure flour by dipping of sifting" What does this mean? I tried subbing "or" for "of" but didn't understand that either.

      Also the blending of the crust ingreds doesn't include the butter as far as I can tell (maybe I missed it). I think you want a kind of shortcake deal, no?

      Plz clarify. Thnx.

        The baking powder is listed with the topping, but in the directions it is added to the crust? Please clarify, thank you. mary

          sheesh! we I make a mistake, I do it in spades! Sorry, all!

          Yes, the butter is blended in with the flour, etc. Shortbread.

          The typo should indeed read 'or'--in other words, it's not critical which method to use. I personally fluff and dip, because I'm lazy, and was astonished when I learned Julia OK'd that method.

          The baking powder does go into the topping.

          Sorry- I must have been hungry when I wrote out the recipe. Distracted by thoughts of lucsious lemon bars!

            I LOVE YOU! Lemon cakey/bar type desserts are my absolute favorite. This is EXACTLY what I have been craving. Recently, I've been buying pre-packaged day old slices of lemon layer cake from my local bakery for $2 each. Because that is the best deal I could find for a lemon dessert fix. The other more high-end bakeries around here charge at least twice that for little lemon bars that I don't even like very much. And i just did not want to be baking cake on a regular basis myself.
