Whoever posted information about combining watermelon and feta cheese - thank you, thank you, thank you! What an amazing combination! I've been eating this all week.

After reading about it on this board, I printed Nigella Lawson's recipe for Watermelon-Feta-Black Olive salad, but have been too lazy to make it so far. But it stuck in my mind, and something clicked when I pulled out the watermelon for lunch the other day.

I plan to eat watermelon-and-feta for lunch every week this summer. And I think I'll even bestir myself to make the full salad for company; I expect I'll get raves on the result.

Thanks again for the pointer to this marvelous combination!

Anne

Here's another good one -- this one with arugula and pine nuts along with the feta and watermelon. I was skeptical before I tried the combo, but it is very very good.

Yes, I think it was Sue's post that I first saw. Thanks!

Me, I have no recipe for what I've been eating, and no dressing - I just cut chunks of watermelon and chunks of feta, and eat (often with whole wheat crackers). Easy peasy, and just right for a summer lunch on a hot day.

I find that I prefer the pieces next to the watermelon rind, although I normally avoid them when just munching a watermelon slice. The greener bits are really nice with the feta - they're almost cucumber-like.

I'm not sure if I was the original poster, but I think I was the among the first to mention it. And someone else mentioned Nigella's recipe. In any case, the recipe I suggested is watermelon, (grape) tomato salad with a spicy dressing. (the spicy part is a chopped jalapeno) You can find the recipe on Epicurious. I'm going to try some of the other ideas as well!

I absolutely adore that salad. I've eaten entire watermelons (smallish ones) in one sitting because of that salad. The other day I saw my first watermelon of the season, and I can't wait!

Jamie Oliver has a similar salad in one of his books, though I forget which. It contains cilantro and has a more Asian style. Haven't tried it yet but it looks very good.

After reading all the posts I made a double batch for a neighborhood party and all the folks went went wild. I added cilantro to the original recipe and used kalamata olives and amped up the lime juice and added lime and orange zest. It was amazing. I did a double batch and it was gone in less tan 30 minutes.

The one negative thing about this salad is that the longer it sits after making, the worse it tastes. I kept a large amount in the fridge and ate some over the course of the evening. I couldn't believe that something that tasted so good when first made, could slowly turn absolutely terrible in a few hours. By this morning the leftovers were disgusting.
