  1. I love oatmeal cookies and have made a ton and tried loads of recipes. I think these are my favorites.

    Mrs. Judge's Cowboy Cookies

    2 cups flour
    1 teasp. baking soda
    1 teasp. cinnamon
    1/2 teasp. baking powder
    1/2 teasp salt
    1 cup shortening--half Crisco
    1/2 cup white sugar
    1 cup brown sugar
    2 large eggs
    2 cup oats
    1 teasp vanilla
6 oz chocolate chips or raisins, optional

Mix shortening and sugars. Add eggs. Add dry ingredients, oats and chips.

Bake 350 about 10 minutes on ungreased sheets.

I just saw a version of this recipe in some or another parenting magazine and made it with my 4 year old. That one called for butter and we used mini M&M's instead of chips or raisins. Delicious!!

      Why "cowboy" cookies, I wonder.

      1. re: marcia

I'm not sure of why they are called cowboy cookies, but a restaurant I used to go to often had "cowboy" cookies with nuts and "cowgirl" cookies without nuts!! Cracked me up everytime!

        1. re: Katie Nell

My husband loves the ones from Quaker Oats inside the lid recipe but I subsitute the raisins with dried cranberries and also add pecans, ummm delicious!

    2. The best oatmeal cookies I ever made were from Martha Stewart Living about a year ago. I've lost the recipe however. They were just classic, no frills, oatmeal-raisin cookies. I just can't tell if it's the same as the one in the Baking Handbook. Does anyone know the recipe I'm talking about.

      1. These are my babies. The very best oatmeal cookies that I can devise. I worked long and hard on these and I am happy with the results. I have been refining these for 25+ years.

        Kim's Oatmeal Cookies
        1 c. butter
        1 c. brown sugar
        1/2 c. sugar
        2 eggs
        1 t. vanilla
        1 1/2 c. flour
        1 t. baking soda
1 t. cinnamon + a dash or two of nutmeg, clove, allpice and ginger
        1/2 t. salt
3 c. Oats - quick or old fashioed
1 c. raisins, or RAISINETTES (the best)

        Preheat oven to 350 degrees.

Beat butter and sugars. Add rest of wet ingredients.

Mix and sift together the dry ingredients except for the oats and raisins.

Add the dry to the wet and mix well. Add the oats and the raisins. Scoop up by fairly large spoonsful - I use one of those cooky dough scoops that works like an ice cream scoop (these are the bomb).

Bake 10 -12 minutes. Cool one minute on sheet then transfer to racks.

        1. re: kim shook

I despise baked raisins, but RAISINETTES!
What a great idea. Thanks for the tip!

        2. I use the classic recipe that used to be printed on the Quaker Oats box. However, I like to omit the 3/4 brown sugar and substitute 1/4 cup grade B maple syrup. This is especially good if you add chopped walnuts or pecans.

A note about texture... if you a combination of regular rolled oats and quick-cooking oats, it makes a very nice texture. Sometimes I do three layers of texture: 1 cup quick oats, 1.5 cups regular oats, .5 cup rolled multigrains.

Also, a classic oatmeal cookie batter is a great based for adding all types of nuts, dried fruits, candies.

I LOVE the suggestion for using Raisinettes.

          1. re: Val Ann C

That's interesting. The recipe on the Quaker box now has 2 eggs and 2 (vs. 2 1/2) sticks of butter.

How does your substitution affect the texture of the cookies? Are they noticeably less sweet?

I've posted this before, but...i make the box recipe with 1/2 the butter, + a double handful of plumped raisins and chocolate chips. They look like this:
