thai pork leg stew (koa kah moo)
I'll paraphrase this from Thailand The Beautiful Cookbook, page 80. I haven't made this.
4 cups water
1 cup light soy sauce
1/2 cup sweet soy sauce
1/4 cup Maggi seasoning
1/4 cup brown sugar
1 teaspoon salt
6 garlic cloves, minced
1 teaspoon white pepper
1/4 cup cilantro
1/8 teaspoon cardamon powder
1/8 teaspoon cinnamon
4 clusters star anise
1 leg of pork, about 2 lb., from the chump end
4 cups cooked jasmine rice
1/2 cup cilantro
Put all sauce ingredients in saucepan. Bring to boil. Add pork.
Simmer until tender, about 1 hour.
Remove pork leg and slice thinly.
Serve plates with sliced pork and rice, ladle sauce over, garnish with cilantro.
