banana recipes

i have 3 overly riped bananas that needs to be used. what can i make with these beides banana bread? help!

    I'd slice them the long way, toss with some lemon juice and or rum and or vanilla and some brown sugar, and broil until caramelized, and serve with ice cream. Delicious. You can also grill them -- also tasty. simple and oh goodness good!

      If you will scroll down to yesterday's post about "Goes well with Lao food..." there is a recipe for a Vietnamese sort of bread pudding cake with bananas and cashews. I was intrigued enough to print the recipe off but have not yet tried it.

        You could make ice cream/sorbet. Or, better yet, chocolate-peanut butter-banana ice cream/fro yo. That's what I use over ripe bananas for when I'm tired of making banana bread or using them in muffins.

          Banana ketchup from Rick Bayless' BBQ Bible. Delicous with jerk anything.

            Or if you dont feel like cooking, you can mash them, freeze them and save them for later :-)

              Friend of mine invented (I think) an amazing banana-blueberry shortcake. Bananas are sauteed in butter and brown sugar. Blueberries are simmered with sugar until saucy. Sandwich the hot banana mixture in the biscuit, top with blueberry sauce and whipped cream.
