I copied the recipe for this bread out of a cookbook which I don't own (and don't recall the name of) and just looked at it and realized it has no butter or eggs. That seems quite odd to me so I think it must be my mistake. Do any of you have a pbbb recipe you'd like to share.

Peanut Butter Banana Bread
1 cup milk
1 cup sugar
3/4 cup peanut butter
1 teasp vanilla
2 bananas mashed
2 1/4 cup flour
2 teasp baking powder
1 teasp cinnamon
1/4 teasp salt.

Mix milk, vanilla, pb and bananas. Add dry and 1/2 chunked banana. Bake 9x5 350 degrees 45 min

Can you tell I was in a hurry and writing shorthand?

Thanks

It may not be a mistake...
3/4 of a cup of peanut butter is essentially over half a cup of oil, or a whole stick of butter.
I'd give the recipe a try.

From the amts and my experience making bannana bread... I would say add two eggs and keep everything else the same.
I agree that the peanut butter is essentially a substitute for butter or oil.
