Some consider this a "trailer park" type of dish, but it is a great ways to use leftover ham, and is also great to feed a crowd:

1 package frozen Ore Ida hash browns
    1 stick butter, melted
    minced onion
1 16 oz container sour cream
1 can cream of chicken soup
    16 oz shredded sharp cheddar
    broccoli florets
    chopped ham
crushed corn flakes ( for the topping)

Mix all of the ingredients together, and top with the crushed corn flakes. Bake at 350 for about an hour. YOu can also use any type oif cream soup ( mushroom is good), can add or leave out the vegatables and/or meat. Easy dish- kids love it.

      great for fried rice, too...

or, as others have mentioned, pea and ham soup (or split pea soup) or a good navy bean soup...

We do a poor-man's carbonara with leftover ham; also quiche or frittata (check Epicurious).

Go to the New York Times website and check the article on ham/pork leftovers that was in the Sunday Magazine. Search porkette to get the recipe.
