Baking Powder advice

Time to get new baking powder. Do brands matter here or are they all pretty much the same?

The two supermarket brands -- Davis and Rumford -- seem pretty interchangeable, but there is a big difference in price. For 10 ou, the Rumford is 1.59, the Davis is 2.49 in my local market. Any reason?

I've got Rumford and I always buy the small container...the other brand here in FL is Clabber Girl...I like buying the smaller container because I believe it won't go stale as quickly as the larger one...heh, not sure of my logic, maybe because I don't bake a TON of goods...did you know there's a test for stale b.p.? You put a teaspoon into a little warm water...if it fizzes, the bp is okay, if not, throw it out. I don't think brand matters...I just like buying the small container which only Rumford offers.

        1. Rumford, Calumet, and Clabber Girl are all made by the same company. Rumford which contains no aluminum btw for better flavor has the highest CO2 yield giving the best rising power. Calumet is 2nd in rising power. Clabber Girl has the least.

              I just looked at the ingredients of these 3 brands. Clabber girl had corn starch first. Rumford has a calcium based 'acid', the others have one or two calcium based ones, plus an aluminum based one. Rumford is probably single acting - it starts producing the CO2 as soon as you add the liquid. The others are double acting, producing part of the CO2 immediately, and part when heated.

              I suspect a Rumford batter should be baked immediately, before the CO2 has a chance to escape. If you have to wait, the others should do better, since additional CO2 will be produced.

                  Rumford is absolutely double-acting, as it states on the front of the can. According to the text on its web site, it does do a greater percentage of its leavening in the bowl than double-acting formulas that contain aluminum, but it IS (in my experience) possible to hold things with no ill effects.
