Pickled Eggs help

Every year around this time (Easter) my mother used
to make a big jar of pickled eggs.I thought I'd give
it a try this year myself.Aside from the canned beets
and vinegar I don't recall the rest of the preperation,
(there may have also been onion and cloves,but I'm
not sure).Any recs and suggestions would be appreciated. TIA

  1. never made them myself, but thought of it last week when I emptied the Vlasic jar of sandwich slices. I kept the jar and figured I'd do hard cooked eggs, peel off the shell and dunk them in there for a while. bet I'm all wrong as to how you really do them though. this may help. good luck

    1. I had never made pickled eggs before, but suddenly found myself overwhelmed by eggs (we keep chickens) and decided to try it. I used the recipe (link below) and everyone raved. I don't eat them myself - go figure.

      Anyway, if you are attached to the beet version, you could try adding some beet juice or canned beets to the brine. Also - I used red onions which gave them a bit of colour.

        Nyleve,thanks for the recipe link,it's definately
        a big help.I'll just add a can of beets to the mix.
        Mom definately used beets,more for the color than
        anything else,made 'em look like Easter eggs!They
        were a staple,back in the day,of every little tavern
        in the area(no. N.J.),along with pickled sausages
        and pig's knuckles.The origional bar snack!

          Enjoy. I made them for a local "pub night" at a friend's house. Definitely a hit with almost everyone, even though I can't bring myself to eat one.
