      <content>The problem with canned beets is they are too sweet, and they lack texture.  You can improve this/dress them up by giving some texture and toning the sweetness.  I'd add some raw thinly sliced red onions for a bit of crunch, some assertive sherry wine vinegar to tame the sweetness and some toasted caraway seeds for a pleasant additional flavor note.  Simple salad...would be even better with fresh roasted beets.</content>

      <content>That sounds yummy. I would love to get some fresh beets, but I have never seen them in my rural TX grocery stores. I know they used to grow them in Colorado. </content>

      <content>You can't get beets where you live?!  Have you tried the farmer's market?  If so, I would ask the manager of your store to carry them.  If people ask, they'll do it.  Wow...I thought beets were so mainsteam.

      <content>Here are some ideas:
 
Orange Glazed Beets
 
1 tablespoon butter
1 tablespoon cornstarch
1/4 tsp.salt
1 can beets
2 tablespoons orange marmalade
1 tablespoon vinegar
 
Melt butter. Stir in cornstarch and salt. Mix until smooth. Slowly stir in 1/2 cup liquid drained from beets. Cook until thickened. Add orange marmalade and vinegar, stirring until blended. Add beets and simmer for 10 minutes.
 

Cranberry Beets
 
1 can beets (16 oz.) drained &amp; diced 
1 can whole or jellied cranberry sauce (16 oz.)
2 tablespoons orange juice
1 teaspoon grated orange rind
1 dash salt
 
Combine all ingredients in a saucepan; heat thoroughly, stirring occasionally. Serve at once. Delicious with turkey or ham.
 

 
Radcliffe Beets
 
1 can beets (15-oz) sliced or diced
1 Orange
1/2 cup Red wine vinegar
1 tablespoon Butter or margarine
1/2 tablespoon Cornstarch
1/4 cup Brown sugar
1/3 cup Reserved beet juice
pinch Salt and pepper
 
Pour off 1/3 cup beet juice from can and reserve. Heat beets in remainder of liquid until simmering. Drain. 
 
Meanwhile, wash orange and pare thin strips of peel from skin. Slice peel into lengthwise threads and set aside. 
 
Squeeze 1/3 cup orange juice and add to reserved beet juice. 
 
Combine cornstarch, sugar, seasoning, vinegar, beet/orange juice and peel in medium saucepan.  Bring to boil over medium heat, whisking constantly until thickened.  Add drained beets and butter to pan and heat about 5 minutes. 
 
Serve immediately. 
 

Beet and Onion Salad
 
1/4 cup wine vinegar
1 teaspoon sugar
1 16 oz can sliced beets, undrained
1/2 onion, sliced in rings
 
Combine above ingredients and marinate at room temperature at least 30 minutes before serving.  Stir every 10 minutes.
 

 
Easy Pickled Beets
 
1 tablespoon mixed pickling spices
2 cups vinegar
2 cups sugar
1 teaspoon ground cinnamon
1 teaspoon salt
4 16 ounce cans sliced beets
 
Place pickling spices in a cheesecloth bag. In a large saucepan, combine vinegar, sugar, cinnamon, salt, and the spice bag; bring to a boil. 
 
Drain the beets, reserving 3/4 cup of the juice. 
 
Stir beets and reserved juice into saucepan. Pour into a 1 1/2-quart glass container. Cover and refrigerate overnight. Remove spice bag before serving.

      <content>I like them with sesame oil, rice vinegar and scallions. Even better if you can get some bitter greens and some bean sprouts (not mung, preferably)...</content>

      <content>I like canned beets in salads- 
 
I agree with Aaron- they need sweetness taming &amp; texture enhancing.
 
I often add them to a mixed greens salad with spiced pecans and crumbled goat cheese with a cider vinaigrette.
 
At a past job, we made a shooter out of finely diced beets with some orange juice &amp; champagne vinegar- we called it a mimosa salad "shooter"
 
Using OJ &amp; Champagne are too great flavors with beets- cold soups, garnishes, toppings for poultry...</content>
