How Long Will Homemade Caramel Sauce Keep? Good Recipe Included
I ended up with extra this time, and am wondering how long I can reasonably store it in the refrigerator. By the way, I really like this recipe for quick caramel sauce for ice cream (from Cook's "The Dessert Bible"):
3 T unsalted butter
1/2 cup packed light brown sugar
1/2 cup packed dark brown sugar
2/3 cup light corn syrup
(I add a 1/4 t salt as well)
Bring to rolling boil, stirring to melt sugar. Stir in 2/3 cup heavy cream, return to boil and remove from heat. Cool until thickened and slightly warm, 15-20 minutes. Make ~2 cups

Sugar is an excellent preservative. It may develop off flavors after a while, so keep it as long as it smells ok. I'd say it will last months.
Months, stored in a glass jar (but not necessarily in the refrigerator). Vietnamese home cooks use it all the time and I guarantee you won't find huge Sub-Zero fridges in the typical kitchen in Saigon.
Your query got me thinking about using up some cream I've got in the fridge by making caramel sauce and storing it. So i went to my favorite caramel sauce recipe (in the Best Recipe--slightly different from above, don't remember it off the top of my head) and they specifically state it's good for 2w in the fridge.
I suppose, as always, YMMV.
