I've got a bag of Trader Joe's frozen rock shrimp at home, and designs on turning it into dinner one of these days. I wasn't sure what makes a shrimp a "rock" shrimp, or if they need to be treated differently than regular shrimp. They're without shells and tails, and I believe are raw. I'm also going to make roasted cauliflower. Thoughts on these shrimp? Ideas/recipes? Is it a good plan to make them a stand-alone, or will their frozen rockness make them better suited to be hidden in some sort of curry or pasta? TIA! I did a search, but couldn't find much.

I keep some of those frozen rock shrimp around for impromptu meals -- usually I just thow a handful into whatever sauce I'm making for pasta.

They make a really nice shrimp risotto. They are pretty delicate, so don't overwhelm the risotto with many other ingredients -- maybe just some peas or steamed 1" pieces of asparagus, and a little lemon zest.

Also they make good shrimp tacos -- sauteed or fried.

Those are great. I like them in a red sauce. For instance, thaw the shrimp according to instructions. Take a large can of Bionaturae crushed tomatoes (or other good Italian brand) and simmer until they have that thick velvety texture. Season with crushed red pepper and fennel seed. (Or capers and lemon; again, just for example.) Add a cup of white wine and simmer some more. When the sauce is the way you want it, throw the shrimp in and simmer until it is just cooked through.

You can also add calamari but you will have to either saute it separately and throw it in at the last minute *or* let it simmer in the red sauce for quite some time until tender.

My only girl married this fella from Fl. after our first grand son made his apperance, the three of them went to Fl. to show the other grandparents, and when they returned they had with them some rock shrimp, and there was also some crayfish and shrimp scampi.
We added a case of king crab and some french fries and a bottle of cocktail sauce and two drawn butters one sweet cream and the other salted.
The scampi was alright but the rock shrimp went first and then everything else came along last, the two butters were used but not the cocktail sauce and the king crab had adent in it but there was quite a bit leftover.
Sooo I say don't destroy the flavor of the rock shrimp or try to cover it up.
