  <title>Zen Bakery Bran Muffins...Ideas?</title>

        <content>My favorite bran muffins are from Zen Bakery.  They are in LA, but they sell them in many stores in CA.  They are low in calories and fat, but moist and delicious.  
Here's the ingredient list:
Water, white grape, bran, whole wheat flour, fruit (changes depending on variety, they make alot), canola oil, sodium bicarbonate, salt.
 
Has anyone seen a recipe that is anything like that?  I'm dying to recreate them, b/c they are hard to find in the bay area.</content>

      <content>Aaron, I hate to tell you this but certain recipes are well guarded secrets.  About 17 years ago I worked for a muffin bakery and one of the conditions of employment was never, ever, ever share the muffin recipes. Any employee caught sharing recipes would be terminated. Sure as shoot'n a coworker did and was immediately fired. The other cafe where he shared the recipe refused to hire him. 
 
On the hand, the same muffin joint would send friends and coworkers to the competition around town to purchase muffins. The 'head baker' who was undaunted, would experiment until he could make something better than the competition. As a customer and employee I noticed much of their competition folded but the place I worked for succeeded long after the others folded. 
 
So my advice to you is to experiment until you can match that muffin or surpass it.  </content>

      <content>I LOVE the plain apple bran, available only at Whole Foods and Wild Oats in Los Angeles.  I've tried to replicate the recipe, but good lord did I fail... I just couldn't get the consistency right.  I've long wanted to go to the bakery and ask, but I've yet to do so... So, to third the request, if any has ideas...</content>

      <content>I think they carry them at Trader Joe's throughout CA, so you might be able to find them in the bay area. Buy a bunch and freeze them for later.</content>
