        <content>What is the easiest way to temper bittersweet chocolate, without a microwave?  I have a candy thermometer, and am looking for an easy way to temper.  Thanks.</content>

      <content>Alice Medrich discusses several ways in her books, and they're worth reading. Whatever method you use (stovetop, micro) dump some cool chopped chocolate into the melted to bring the temp down quickly (beats the heck out of using a marble slab!). Good luck. </content>

      <content>I recently did this to dip dried fruit in, and it was very easy. Chop your chocolate. Gently melt about 2/3 of the chocolate using a double boiler. Remove from the heat and stir in the rest of the chocolate until it melts.</content>
