side dishes for roast duck

  • a

I will make some sort of potato with the duck fat and a salad, but I'd like 1 or 2 less rich vegetable dishes. I was going to make braised red cabbage but my boyfried vetoed that idea. Any thoughts? I'm cooking for eight. Thanks.

  1. Here are some thoughts:
    Braised leeks, endive or raddichio.
Roasted cipollini onions with balsamic glaze.
    Garlicky greens (chard and spinach).
Broccoli rabe sauteed with garlic and oil.

    1. sauteed baby bok choy

      1. A classic French pairing is duck and turnips. Cook up the turnip greens as well and glaze the turnips for extra sweetness. Goes well with potatoes, or mash the turnips with the potatoes.

Good idea. There were turnips in one of the Bistro K dishes I had the other day. They appeared to be sliced about 1/4-inch thick, quartered, roasted (like you'd do with a 'tater---coated in EVOO, though a little firmer), and glazed with a reduction.
