      <content>Mexican meat markets often make their own.  Not in the East Bay, but I bought some snowy white manteca from Quezada market in Santa Rosa.  It's main store is in Novato.</content>

      <content>I bought some from Niman at Ferry Plaza.  Not the east bay but don't they have a store in Alameda or somewhere else?</content>

      <content>Cafe Rouge might make their own and is a significant distributor of Niman product.  It was prominantly displayed at the Niman stall at Ferry Plaza a couple weeks back.  Is there a new diet trend on the horizon?  The "It's All Good Fat Diet "?  You can always make your own.  Buy some fat back, remove the skln, cube, and slowly render.  For a memorable twist, add some rosemary and garlic to the slow rendering process, read up on Piadini (a substantial pancake from Northern Italy), top with Reggiano and have a religious experience.</content>
