        <content>Any good ideas about cooking rockfish (striped bass)?
It's available in Maryland.

      <content>Just had some last week. I prefer to keep it simple, a little lemon juice, a litle buter and broil it. It's a nice firm white meat very similar to Halibut. Fresh caught is best. Most of them are probably in the ocean by now. In NC they are just off the beach. Some markets sell farmed, in NJ that's all you'll find. </content>

      <content>Thanks -  The man I buy fish from said they were caught in the lower Chesapeake Bay.  He also said he tried selling farm rockfish but they didn't taste anything like the real thing so he only sells it when it's wild-caught.</content>

      <content>I really enjoy Chinese style oven steamed rockfish.
 
Score the whole fish on it's side. Rub it with a little salt and pepper. Lay the fish on a piece of aluminum foil (make sure to leave enough foil to wrap the whole fish) season with 2 tbs of light soy, 1/4 teaspoon of sugar, 1 tbs of sherry, 3 green onions chopped, 2 slices of ginger chopped, a few drops of sesame oil. Wrapped the whole fish up in the foil put it in the oven at 350 for 20 min. or until the fish is cooked (depending on weight). Heat 3 tbs of canola oil or vegetable oil until smoking point, pour it on top of the fish (unwrap the foil first). sprinkle with cilantro and serve.  </content>
