        <content>i've made these before but i'm always interested in variations. anyone have good recipes for homemade tater tots, or blue cheese-stuffed ones specifically?
 
also, brainstorm! What's a good dipping sauce to go with them?</content>

      <content>This is my version. I have no idea where I got the recipe it was many years ago. They are really good plain but also with some sour cream and chives to dip them in. I use mini-muffin cups but tiny tart molds would work well too.
 
Potato Bites
 
2 lg. eggs
1/4 c. canola oil
3 Tbs. Matzo meal
1 tsp. salt
1/8 tsp. freshly grated nutmeg
&#189; tsp. baking powder
1 small onion
1 clove garlic, minced
1 Tbs. crisp bacon bits
freshly ground black pepper to taste
1 1/4 lbs. baking potatoes
paprika
 
Preheat the oven to 400&#186;F. And grease 36  1 3/4" X 1" muffin cups. 
 
In a large bowl whisk together the eggs, oil, Matzo meal, salt, nutmeg, black pepper and baking powder. Grate the onion on the large holes of a grater and whisk in to the egg mixture along with the minced garlic. Peel and quarter the potatoes and chop finely in a food processor. Add the potatoes to the batter and stir well to combine. Spoon a rounded tablespoon of the potato mixture into each prepared muffin cup. Sprinkle with paprika and bake until golden brown, about 30 minutes.</content>

      <content>This must be a Midwestern thing -- that's the only place I know of where tatertots are considered an ingredient (i.e., tatertot hotdish). Not that there's anything wrong with tatertots. </content>

      <content>Sorry, no recipes, I've never even heard of such a thing. But I am intrigued...let us know how it turns out. 
As for dipping sauce, I LOVE to dip my french fries in honey (is that weird?) and I know honey goes well with blue cheese, so maybe something along that line...</content>

      <content>Sounds really yummy. I think I would stuff mine with jack or cheddar cheese. Good dipping sauces would be ranch or honey dijon dressing I'm thinking.</content>
