Roasting Marrow Bones

Does anyone have a foolproof recipe for roasting beef marrow bones to slather on toast points with salt?

I'm getting conflicting reports on how long to roast the bones for, and at what temp....any help would be appreciated.

  1. there was a post on here a while ago....I think you roast them at 350 for about 35 minutes

      yeah i tried Control F'ing a search, but nothing came up.

      that 350 for 35 minutes is on par with what i've been hearing, but also hear 350 for an hour and 450 for 20 minutes.

      I guess it also depends on bone size...i think i'll get 2 inch bones.

        too long or too hot and the marrow melts.....

    2. Linked my report w/ recipe below. I used Fergus Henderson's recipe from The Whole Beast. Veal bones are preferred (more marrow, less fat), but I used beef since that's all I could find. Still delicious. Enjoy!

        1. Jeffrey Steingarten suggests steaming or microwaving them until just tender, then browning under the broiler. He also suggests cutting the marrow bones in half lengthwise, as opposed to a bunch of crosswise sections.
