        <content>I'm trying to figure out how to execute a recipe I found on Epicurious for my holiday party. I usually offer 8-10 hors d'oeuvres or small plates and I like to include something interactive. Last year I did fondue which went over beautifully. 
 
This year I want to use a recipe for Mozarella Smores that is designed for summer bbq's. Bocacinni (little balls of fresh mozarella) replace the marshmallows and you sandwich them between crostini. The original recipe calls for tomato and fresh basil but I'll use roasted red pepper because the tomatoes are so dismal at this time of year. 
 
So my dilema is how to replace the grill. Originally guests are supposed to stand around the outdoor grill to toast/melt their mozarella. I live in Pennsylvania so this is not feasible. But I think I could maybe use one of those portable burners or something? If so, where do you get them?</content>

      <content>How about one of those hot stone thingies? I have one that I bought at a garage sale and always forget to use. You light a burner under this stone slab and it heats up. Sounds like this could work for your idea.</content>

      <content>or a grill pan or one of those grill/griddles that span 2 burners. I have one from Le Creuset that does that sort of thing well</content>

      <content>How about a George Foreman (or a panini grill)? We have a GF and use it all the time - esp. for grilled veg or grilled cheese sarnies.
 
You know what would be good in those "smores"? Pesto, or tapenade. Yum.</content>

      <content>Sounds delicious, but what a truly horrible name for this.  Aside from the fact that it has nothing to do with s'mores in either ingredients or preparation method, it sounds over-the-top cutesy.  
 
Why don't you just melt them under the broiler before serving?

      <content>The s'mores name comes from the fact that the diner toasts her own bocaccini on a skewer over the flame, then sandwiches it between the crostini with the garnishes. But I certainly won't deny that it's cutesy!
 
The guest list includes people from several different social circles and some guests don't know another soul at the party. While I'm careful to introduce everyone and let them know what they have in common, I still want to ensure that conversation flows. And silly as it may sound, I've found that these interactive dishes help people build a quick rapport. In years past I've done fondue and a chocolate fountain and I'm running out of ideas!
 
I just hope that it will be fun and taste good, The flavors should go nicely and I'm going to use the suggestion to offer tappenade as well!</content>

      <content>You can buy a "Smores" set at Target for like $20.  It comes with a little burner set up (you need to get 2.6 oz chaffing fuel separately - also found at target) 4 ceramic dishes for holding stuff (in your case - 2 for peppers, 2 for mozz) a lazy susan that it all fits on, and four fondue forks.  The burner sits in the middle and is slightly elevated and has a grate so the food doesn't fall into the fire.  The fire lasts about 2 hours with one chaffing fuel cannister.
 
It's really cutesy and stuff, but it works great for smores and would probably be perfect for your use....plus you can make smores with the hubby or kids anytime.</content>
