Christmas Goose
I've never roasted a goose before so I'm wondering if anyone has any tips and/or recipes they could share towards my endeavour.

Just note that it only serves 4. Goose is not like turkey; it does not go very far unless you serve it in very small portions around which you build a much bigger meal.
I love goose, but most of the time I really cook it just to render the fat for other uses, not really to build a meal around. When I have served it, I have usually also served a ham -- very easy to prepare.

Have eaten many many a goose and duck (all wild) growing up on the Chesapeake Bay. My Mom use to always put the birds in a brown paper shopping bag while cooking them and that kept the oil from splattering all over the oven.
