      <content>This is very rich and almost a dessert. It is far too rich to serve before a meal it will fill you up quickly. Please note the eggs are not cooked so if you have guests who might be effected by this warn them or have some commercial prepared stuff for them.
 
Seperate 12 eggs and beat the yolks until they are very light. Then, gradually beat in 12 Tbs. sugar and beat again until quite light. Add 3/4 C. good bourbon and beat, add 3/4 C. rum, not the white variety but something a bit richer. Okay you can stop here and refrigerate until just before serving. When ready to serve beat the 12 egg white until stiff and fold in then whip 3 C.  heavy cream and fold into the nog. Dust the top with freshly grated egg nog. It is pretty served up in a silver punch bowl but you can also just serve up cups of it and dust the individual portions with freshly grated nutmeg.
 
There is also another old fashioned egg nog type Christmas dring called a Tom and Jerry. This does not make a lot of serving, maybe 3-4, but if you Google for Tom and Jerry recipes you can bring them up in quantities.
 
Seperate an egg beat the yolk until quite light in color. Then with an impeccably clean beater, beat the white until stiff. Then combine the two and add enough powdered sugar to make a stiff batter. Add a pinch of baking soda and add 1 Tbs. medium amber rum. Add a little more sugar to stiffen and stir. Pour 1 Tbs. of this "batter" dissolved in 3 Tbs. hot whole milk into a hot mug/ Add 2 Tbs. more rum and fill to 1/4" of the top of the mug with hot milk top with 1.5 tsp. brandy and sprinkle with freshly grated nutmeg
 
A Tom and Jerry mug holds about 8 oz. Spode still makes  T&amp;J mugs in their Christmas Tree Pattern.</content>

      <content>Anyone have a version that is somewhat healthier?  I really like egg nog, so I'd love a recipe that was somewhat easier to justify.

      <content>I guess you could use Splenda and fat free cool whip or the low/no fat version of whipped cream in a can.
 
Of course the recipe makes a gallon and when you divide it in to half cup servings it is not that bad. It is so rich than more than half a cup is punishment.</content>

You can substitute half and half for the heavy cream if you really want to, but I'd much rather have a small serving of ridiculously rich eggnog than a bigger serving of a less rich one.

How about a whole milk base, and then a smaller amount of whipped cream gently folded in?

      <content>You can make it with milk. Just cook the nog in a bain-marie so it thickens, strain, add rum, and chill. I've never made it with Splenda, but I guess you could if you wanted to.</content>

      <content>This is my aunt's version, that's been published in our annual community recipe book since the sixties! I can't say how it compares to 'regular' eggnog; this is my childhood version, and therefore the one I love. In terms of rich vs not rich, I find most things with egg in it are rich enough without adding cream!
 
Cold Eggnog for one:
1 beaten egg
pinch salt
1/4 tsp vanilla essence
2 tablespoons sugar
1 cup cold milk
 
Beat egg, sugar and salt. Then beat in milk and vanilla. Add ice.
 
Here's another oneI made once or twice last winter. Not bad.
 
Hot Chocolate eggnog
1 egg yolk
1 tablespoon sugar
4 blocks dark chocolate
400 ml hot full cream milk
splash rum/brandy (optional)
 
Combine egg yolk,sugar, chocolate and milk in a mixing jug and blend well. For added boost, add splash rum or brandy.

      <content>My recipe is similar to Kate's
 
12 eggs, separated
1 cup sugar
1 pint brandy
1/2 cup rum
2 quarts 1/2 and 1/2
1 pint whipping cream
freshly grated nutmeg
 
Beat the egg yoks until thick and lemon colored, adding the sugar gradually making sure it's incorprated completely and not grainy.
 
Beat in the brandy and rum.  
 
Stir in the half and half and cream slowly, stirring constantly.
 
Whip the egg whites until stiff.   Fold into the eggnog mixture and dust with nutmeg.
 
Talk about rich and good.
 
Goes down real smoothly and hits you later.</content>
