Creamy Celery Root

Inspried by Freddie's question about celery root, I bought this freaky looking vegetable and made some creamy celery root. It was so unbelievably good, I think I enjoyed it more than mashed potatoes! To bring the flavor out, I braised it in some butter instead of boiling it, and then pureed it with a little cream. Yum!

Would make a great side dish for Thanksgiving. Too bad I am not cooking :(

  1. Aw, cute pic on the blog. Funny how such a gnarled up root could produce such elegant, subtle flavors. Love the braising in butter idea.
