Leftover leg of lamb

I have a leg of lamb with a little meat still clinging to it-- any ideas what to do with it? Soup?

    Go for the gusto! I'd say stock, but it's probably not enough bone or meat to write home about...

    Toss your leftovers on a pot with a coarsly chopped Onion, three ribs of celery, two chopped carrots, and maybe half a head of fennel, a sachet with some thyme, peppercorns a couple of cloves of garlic, some parsley. Fill the bot to cover + 2", bring to a boil, reduce to a simmer and let it ride for lets say 2 hours.

    Strain out thge big stuff (Chinois does it for me) and chill the broth down.

    Next time you make a lamb stew, use THIS as your base and man oh man will you be a happy puppy.

    Heck- I do this kind of thing with roasted chicken, duck and turkey carcases about onec a week! just toss rice in there and go! Noodles for soup? New veg? I just made myself hungry.
