Caldo gallego recipes - what do you have that's good?

I usually default to opening a can of the Kirby brand caldo which is pretty good. It seems simple, enough, however, that I can and should make my own; especially now that the autum weather has arrived - with a vengeance.
I'd appreciate any tried and true recetas for this dish that anyone cares to offer!
