Veggie Burger Recipes

I love to make my own vegetarian burgers rather than buying the frozen variety. Looking through my recipes, it seems that I have a million variations on black bean burgers...does anyone have a good recipe that uses red kidney beans, or maybe white beans or other ingredients?

    1. I would be interested in one with a potato base too...

In India, they often make "veggie burgers" from aloo tikki, which are little potato patties. if you do a search for "aloo tikki" you will find lots of recipes.

          • I've made some tons of times using kidney beans or chickpeas, but I never follow a recipe. The general idea is:

sauté onions/garlic/grated veg until all liquid evaporates
mash beans and add to mix
keep cooking until beans release liquid and it cooks away
add binding agent (I like potato flakes or rolled oats) and extras (cheese, nuts, whatever)
            cool
            form into patties and bake/fry

You can make lots of variations depending on what you feel like eating. I've done Tex-Mex, Moroccan, Indian, Greek, etc.

You can also roll them in breadcrumbs or nuts before baking, but usually I'm too lazy. :-)

Do you bake, fry or grill them? I'm interested in foreman grilling or ovenbaking, and I'm wondering how these would hold up/dry out using those methods.Thanks.

                    It depends.

If I'm making a small quantity, I panfry them, especially if they're sturdy. If they're more delicate or if I'm cooking for a crowd, I oven bake.

Don't use the GF grill, it will squish them and make them fall apart. But it's great for veggies!

for how long, at at what temp?

Well, that the kind of details I forget from one time to another, but usually around 400, for approx. 20 mins.

You have to flip them over half way. And either use parchment paper or really oil the pan, because otherwise, the burger will stick and break when you try to take it off.
