Can you freeze chicken curry?

Husband and I both have a craving, we usually make it with a whole chicken and end up with enough leftovers for dinner the next night, but our weekend is fully booked (dinners out Sat and Sun) so can I freeze the leftovers and reheat next week?

I'm mostly concerned about the coconut milk, won't it get funky?

  1. I wouldn't worry about it. Pop it in the freezer.

    1. I just defrosted some coconut milk that I had frozen a couple of months ago. (I wish they would make smaller cans) It was just fine.

        Candy - my Asian grocer carries little 5.6 ounce cans of coconut milk. It's nice for a dish to serve 2 people.

        And you can freeze curries with coconut milk. Once everything's all bound together, it doesn't separate during freezing.

          Neither of my asian groceries carry smaller sizes so I continue to use half and freeze half.
