How long can I leave chicken in Marinade?

Hi, I put some chicken thighs in marinade for kebabs at ~4pm yesterday. Can I leave it in the marinade for greater than 24 hrs? most recipes say no, but the marinade I used contains no lemon/lime juice or vinegar. It is: olive oil, cilantro, cumin, chili seasoning, garlic, soy sauce, salt/pepper.

will my chicken be terrible if I let it marinate too long?

  1. How much soy sauce? If not too much, it won't be too salty... If a lot of soy, overnight may be too much.

      I was eyeballing it, but probably 2-3 tbsp for two and change pounds of chicken.

    2. The benchmark the vacuum tumbler types talk about is 1-2% marinade pickup by meat in 48 hours.

      I had some wings in a citrusy Mojo 'nade for 3 or 4 days recently, with good results.

      My VietN and Tejas fajita marinades seem to need 3 days to work.

      With fresh pineapple juice, a few hours is too long, unless you like chicken breast with the texture of beef liver.

      Maybe it's more properly called brining at some point.
