Easy sides for an easy main

I am having a few friends over for dinner Wednesday after work and we are serving a ham. Any quick sides that you can suggest? I have a function after work tomorrrow (Tuesday) and after I shop and get home it could be after 11. So I need something I can just throw together when I get home from work before the dinner. I appreciate any suggestions.

  1. Try the Green Beans with Bread Crumbs at allrecipes.com but skip the bread crumbs. Very good and very easy, the only thing is they seem to cool quickly.

    1. When you say ham, I think of hash brown potato casserole...SO junky but tastes great with baked ham..you can find it anywhere on the 'net. You could easily make it the night before and reheat it. I only tried it for the first time a few years ago at a company holiday party at someone's house...main dish was the baked ham, someone brought the hash brown potato casserole as a side dish and I just loved it.

        1. I'm a fan of sweet potatoes. You can cut them into inch or so sized pieces, toss them with some salt, pepper, chile powder, molasas or maple syrup, and a little butter. Roast in a 425 degreee oven for 15-20 minutes until they're done, preferably a little brown too. So good. Sweet and spicy.

          1. I like brown butter green beans. Buy frozen haricot vert from Trader Joe's. Defrost in the micro, with a couple Tbsp of water.

            Meanwhile heat butter in a small pan until it stops bubbling and is golden in color. Pour off water from the haricot vert and toss with the brown butter. Top with Kosher salt. Very good, and very easy.
