bourbon sweet potatoes for funwithfood

Hi funwithfood... this is a family recipe of one of my co-workers. I hope you like it.

bake sweet potatoes (I usually bake 6-8 good sized yams or in a pinch use two 23 oz cans) The recipe is flexible.

bake at 350-375 for 45 mins to hour depending on size. when they give when squeezed they're usually done. cool on counter until cool enough to peel without causing yourself injury... you can bake the yams a day ahead if need be. spending the night in the fridge doesn't seem to harm them. mash with electric mixer.

add: 1 stick of butter (I find 1/2 a stick is plenty)
1/4 cup bourbon
1/3 cup orange juice (and a little zest if you like)
1/4 cup brown sugar (packed)
1 tsp salt
1/2 tsp cinnamon & dash of nutmeg

beat until fluffy and smooth, spoon in to greased (with more butter) 1 1/2 quart baking dish, sprinkle chopped pecans in ring around edge of dish. bake for 45 mins at 350.

I like to let it sit on the counter and cool for a good 15 mins before serving. it is pretty nuclear hot when it first comes out of the oven. it's not diet food, but everyone seems to like it. butter and booze... always a winning combination. :) megan

  1. Mmm..maybe I'll add a bit of bourbon & OJ to one batch :) (I bake 12 lbs of yams).
