After reading the article in Tuesday's NY Times about the benefits of soy protein: does anyone know of a good recipe for tofu cheesecake? I can Google many, but would appreciate recommendations either to get online or from a cookbook.
There was a good thread over a year ago in New York > The Best about buying tofu cheesecake, but it would be great to make at home.
My girlfriend made chocolate tofu cheesecake at our dinner parties. It was really easy. The recipe was in a book called something silly like "Healthy Japanese Recipes".
graham cracker crust
No lie - that easy. See if you can find the cookbook.
Let me try emailing my friend for the recipe. You will be hooked.
I have made tofu chessecake before. I have used the regular chessecake recipes with one extra step. I tie up the tofu in chesse cloth and let the water drain in the refrigerator. I hang the chesse cloth bag from a rack over a bowl. In a day or so a lot of the water from the silky tofu has drain. Then the tofu has more a chessey texture. Next time I make it I will try to write it out. I do not cook from recipe.
I made one a few years back--I think I found the recipe on the internet or one of those old low-fat cookbooks I used to use. ha. As someone who is not a fan of tofu who made it for her boyfriend who likes it even less, it was absolutely fabulous. Good luck finding a good recipe and I don't know why it isn't more popular. Yum...
