      <content>I've had a lot of luck these days with broccoli salad:
Bag of florets. cup of grated cheddar, 1/2c chopped red onion, 5 slices bacon crumbled and 1/2 cup dried cranberries
dressing - 1 cup mayo and 1/2 cup sugar or splenda</content>

      <content>How about rattatouille? Take advantage of the summer bounty of eggplants, peppers, tomatoes...it's good warm, room temp or even chilled. Serve with wedges of pita and optional shredded parm. Good veggie entree, as salad, or as a side.</content>

      <content>Salads are always stables at office parties I've been to. Potato salad, pasta salad, chicken salad, green salad, etc. Something a little different, try roasted vegetable couscous. I just dice up some vegetables (combination of carrot, zucchini, squash, onion, etc.), roasted in the oven with salt, pepper and some olive oil, then mix the veges with prepared couscous (equal about of chicken stock and dry couscous - microwave stock till hot, add couscous, cover with plastic wrap, leave alone for 5 minutes then fluff with fork). I also like cheese/olive/fruit platter with some crusty bread. </content>
