Your favourite recipe for baby carrots?

my favorite, that I just made the other nite to serve with the lemon pot roast I got from here is ginger glazed. Just melt some butter over low heat in a sauce pan, add the baby and toss to coat. Grate fresh ginger into the pan and toss again. Cover and let carrots cook for anywhere from 5-15 minutes based on the amount of carrots and just how baby they are in size. I like mine with a little bit of crunch. If you like really tender it might take longer. Oh and the key is low heat so the butter doesn't burn.
After cooking them, glaze them in orange juice, orange zest, butter and either maple syrup or brown sugar.
My favorite is roasted baby carrots.
Dump a bagful of baby carrots on a cookie sheet, then drizzle with olive oil and sprinkle with salt, pepper, and herbs (such as thyme, rosemary, whatever). Roast at 425 degrees until they're soft and have browned bits (about 20 minutes). Serves one - they shrink as they cook.
A variant is to add other root vegetables, cut to approximately the size of the carrots. Rutabegas, parsnips, turnips, onions, beets - they're all good.
