what can i do with leftover ginger?

i have about two cups of leftover fresh ginger pieces that i've boiled for a ginger-lemon-honey tisane (it has almost killed my cold, thankfully!) and i hate to just throw it away. any suggestions? thanks!

  1. Wrap it in plastic and freeze.

      Place it in a ziplock bag and freeze it. When you need it, take it out of the freezer, out of the bat, and place in a hot oven for 5 minutes. Next step is to put back into ziplock bag and pound on it with a skillet or mallet. This makes it easier to mince, chop, puree, without all the stringy-ness.

    2. Fill a glass jar with Sherry wine. Add peeled ginger pieces. Keep in refrigerator and use as needed. Replenish wine after each use. Eventually, the ginger will lose its flavor and have to be tossed, but in the meantime, you have a treasure.

      1. Is this the ginger you used to make the tisane? If so it probably has very little flavor left, I'd toss it. If it is just extra ginger then do the sherry thing with it and keep it for cooking Chinese dishes.
