mac n' cheese (Drunken Goat Style)

I just had drunken goat mac n' cheese at the Blue Plate in San Francisco's Mission District. Anyone else had it? More importantly, anyone have a homemade mac n' cheese recipe that would suit this kind of cheese????
Any homemade mac and cheese recipe would work with drunken goat I think -- we make a bechemal sauce and add the shredded cheese. [Not familiar with that restaurant's version, I'm in the east.]
OR really take the short cut and make Annie's shells and cheese and add variety cheese (drunken goat, or parmasean or whatever) and fresh herbs (basil is great) and black pepper.
