Leftover cooked corn...Fritters?

I have a bunch of cooked corn from a party that I cut off the cob after it was cooked. Any ideas what I could do? All of the fritter recipies call for fresh corn. Can I use this?

  1. Try a batch and see. I use leftover corn in a black bean and tomato salsa and in corn bread. It can also be frozen and added to soups, including chowder, in the winter.
